Number of Servings: 5

Ingredients

    5 boneless, skinless chicken thighs *you can use breasts for even lower fat*
    1/2 cup pizza sauce
    1 cup shredded pizza or mozarella cheese
    1/4 cup flour
    2 tbsp grated Parmesan cheese
    1 dash pepper
    2 tbsp olive oil

Directions

Place chicken thighs, one at a time, in between two sheets of wax paper. pound with meat mallet to tenderize. Mix together flour, parmesan and black pepper. Coat chicken with flour mixture. shake off excess. Heat olive oil in a large skillet. Place chicken in skillet, heat for 3 minutes per side or until browned. Pour pizza sauce over chicken. Heat through. Top with mozarella cheese. Cover until cheese melts.
Makes 5 servings.
