Lima Bean Salad

Introduction

This dish can be served warm or cold. This dish can be served warm or cold.
Number of Servings: 8

Ingredients

    1 15.5 oz. can Butter Beans drained & rinsed
    1 15.5 oz. can Lima Beans drained & rinsed
    1 16 oz package Frozen Mixed Vegetables
    1 15.5 oz. can Diced Tomatoes with liquid
    1 8 oz. can tomato sauce
    1 medium onion, chopped
    1 medium green bell pepper, chopped
    2 Tbsp. Olive oil
    1 tsp. salt
    1/4 tsp black pepper

Directions

Using a 3 quart covered saucepan heat oil on high. Lower heat to medium and saute onion and bell pepper until tender, about 10 minutes. Stir in the remaing ingredients and when the mixture bubbles all over, cover and simmer on low for 20 minutes. Turn off heat and stir well. Cover and let stand 10 minutes. Makes 8 one cup servings.

  • This is amazing and so simple. I didn't feel like cooking, this looked easy enough. I used frozen onions and peppers so I didn't have to chop, I am sure it would be even better with fresh. But we LOVED it. I will make this again. - 5/23/09
