Beef Stew

    1 tsp canola oil
    1 1/2 lbs lean beef stew meat or pork, 1/2" cubes
    2 1/2 c water
    1 tbsp tomato paste
    1 large garlic clove
    1/2 tsp thyme leaves
    1/4 tsp pepper
    3-4 medium carrots, sliced
    4 small potatoes, 1/2" cubes
    1 c frozen peas
    11/2 - 1 small onion, chopped


Brown the meat in oil. Add water, tomato paste, seasonings, carrots and potatoes. Bring to a boil and simmer for 30-40 minutes, til carrots and potatoes are getting tender. Add the onions and peas and cook another 15 minutes.
