Chicken-Broccoli Casserole

Introduction

A great one dish meal-can be made ahead and refridgerated-just add 15 minutes to the cooking time. If you don't like broccoli-use another veggie or no veggies at all. Number of Servings: 6

Ingredients

    2 cups of brown rice (cooked)
    approx 1 lb of boneless skinless chicken breast-cooked and cubed
    1.5 cups of cooked chopped or cut broccoli
    1 can of cream of chicken soup
    1/4 cup of light mayo
    1 can sliced waterchestnuts
    2 tbs of light margarine (melted)
    1/4 cup seasoned breadcrumbs

Directions

Preheat oven to 350. Cook chicken and cube. Cook broccoli, drain well. In a greased cassarole dish-mix all ingredients except melted margarine and bread crumbs(I just mis them all in the cassarole dish) sprinkle with breadcrumbs and drizzle margarine over top. Bake one hour(or if made ahead and refridgerated-cook 1 hr 15 minutes)
