Stir Fry Vegetables with TofuSubmitted by: LADYPHOENIX61
1 lb firm tofu, drained and cut into 1/2 in pieces
2 Tbsp EVOO
1 clove garlic, crushed
2 slices of fresh ginger, peeled
1/2 lb fresh sliced mushrooms
1 cup sliced carrots
1 cup broccoli florets
1 cup sliced green onions
1/4 cup soy sauce
1/4 cup dry sherry
1 Tbsp cornstarch
Heat wok or skillet over med to med-hi heat. Put 1 Tbsp oil in pan, add garlic and ginger. Stir fry until lightly browned, then remove and discard.
Add tofu to seasoned oil and stir fry for about 5 minutes. Remove and set aside.
Add vegetables one at a time in this order: carrots, broccoli and mushrooms. Cook each vegetable for 1 minute before adding the next. Stir constantly. Veggies should be crisp-tender.
Then add tofu and scallions. Stir fry 2 minutes.
Stir sauce and add to pan, stir frying until sauce thickens.
Serve over brown rice as a meal or without rice as a side dish.
