Souped-Up Tomato Soup

Introduction

Ingredients

    1/2 cup onion, diced
    cooking spray
    1 (14 1/2 oz) can petite diced tomatoes with garlic and olive oil.
    1 (10 3/4 oz) can condensed tomato soup, undiluted
    1 cup milk

Directions

Spray a non-stick sautee pan with cooking spray and sautee the onion until tender.
Stir in tomatoes with juices, soup and milk.
With a hand held blender, blend the soup until desired consistency.
Bring soup to almost a boil.
Reduce heat. Cover and simmer for 10 to 15 minutes.
