Spiced Coconut Beef Soup

Ingredients

1 1/5 lb. chuck beef, cut into chunky cubes
1 can organic coconut milk
1 large onion, diced
5 cloves garlic, smashed
3 stalks celery, chopped
3 medium carrots, cut chunky
3 large potatoes (or 2 sweet potatoes, or 3 cups Jerusalem Artichoke) cut into large cubes
1 tsp. extra virgin olive oil
1 bay leaf
2 tblspn. Garam Masala spices (or equal parts cinnamon, clove, nutmeg, corriander)
Enough home-made chicken stock to fill pot
Salt and pepper to taste
Directions
This is a "crock-pot style" soup that needs a few hours to simmer and soften. It is made in a large stock pot over the stove top.
Over medium-high heat, bring olive oil to temperature. Dredge beef chunks in Garam Masala spices until coated. Brown beef in the stock pot.
When beef is browed, add a little chicken stock and all of the vegetables. Bring to rapid boil, tossing vegetables constantly.
As vegetables begin to soften, add the rest of the ingredients and bring to a boil. As soon as the soup comes to a boil, drop the heat to low, cover, and simmer for 2-3 hours or to desired texture. The meat will just fall apart!
Top with fresh basil and jalapeno, shaved mango, or whatever you like! Enjoy!
