IntroductionSomething for Valentines Day. These are just for you, no sharing! These also make a lovely presentation at bake sales. They remind me of Lucy Ricardo in the candy factory! 1 10 jar maraschino cherries (42-28 cherries)
1/2 cup Smart Balance 50/50 unsalted butter blend, softened
1/2 cup Splenda for Baking*
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1&1/2 tsp pure vanilla
1/2 cup unsweetened cocoa powder
1&1/2 cup all-purpose flour
1 cup semi-sweet chocolate pieces(no imitation chocolate)
1/2 cup low fat sweetened condensed milk
*If using regular sugar use 1 cup. Calories will be 84.5/ cookie
Shape dough into 1 inch balls. Place balls aout 2 inches apart on an ungreased cookie sheet. Press your thunb into the center of each ball. Place a cherry n each center.
FOR FROSTING: In a small saucepan combine chocolate pieces and sweetened condensed milk. Cook and stir over low heat until chocolate melts. Stir in 4 tsp reserved cherry juice. Spoon 1 tsp frosting over each cherry, spreading to cover. If necessary frosting may be thinned with additional cherry juice.
Bake at 350 for about 10 minutes or until edges are firm. Cool on cookie sheet for about a minute then transfer to a rack and let cool.
SHOULD MAKE 42-48 COOKIES DEPENDING ON HOW MANY ARE IN THE JAR :-)
