Introduction

An Indian rice pudding. Substitutions from original recipe. An Indian rice pudding. Substitutions from original recipe.
Number of Servings: 4

Ingredients

    1/4 c dry Japonica rice
    1/2 c dry basmati brown rice
    1 c water
    1/2 c whole milk
    1/2 c fat free 1/2 & 1/2
    1 1/2 c lite coconut milk
    2 Tbls honey
    1 1/2 Tbls Splenda
    1 Tbls raisins
    1/4 c craisins
    8 dried apricot halves, chopped
    1/4 c cashew halves
    1/4 c sliced almonds
    9 cardamon seeds
    1/4 c flax seed meal

Directions

Cook rice in water and milk (not coconut or 1/2 & 1/2 yet). Add flax, honey, splenda, coconut milk and 1/2 & 1/2 when rice is soft. Let thicken a bit then add dried fruit and cardamon. In the last few minutes add nuts and cook til desired consistancy. Should be like rice pudding.
