A large can of tomato's
Small can of corn
Can of black eyed pea's
1 large carrot
2 celery stalks
1/2 cup of diced onion
2 T chili powder
1 t ground black pepper
1 T italian seasoning
6-8 cups of vegetable stock
2-4 cups of water
Add vegetable stock, canned tomato's (crush them first and make sure you use the juice), corn (with juice), black eyed peas (rinse well) and some extra water.
Cut up carrots and celery and onion and add them to the pot.
Add seasoning as you see fit. I always add a bay leaf (or three).
Let cook on medium low for a couple of hours and enjoy!
