Lynne's Turkey Meatloaf

Introduction

A change from the traditional beef meatloaf. A change from the traditional beef meatloaf.
Number of Servings: 6

Ingredients

    1 lb Jennie O Ground Turkey
    1x6oz pkt of Stove Top Sutffing with Cranberry
    1 Onion-Lge - Chopped
    2 Cloves of Garlic - Chopped or Minced
    1 Green Bell Pepper - Seeded and Chopped
    1 Tbsp Ground Oregano (or to taste)
    1 Tbsp Ground Basil (or to taste)
    2 Tbsp Chopped Pimentos
    2 Tbsp Kroger Traditional Barbeque Sauce
    Salt and pepper to taste

Directions

Preheat Oven to 375degrees.

Mix Ground Turkey, Onion, Pepper and Garlic in a large bowl.
Add Oregano, Basil and Pimentos.
Mix in pkt of stuffing mix.
Add salt and pepper if needed.
Mix in Barbeque sauce.

When all ingredients are mixed thoroughly place the mixture into a 9 x 13inch baking dish. Shape to a loaf shape. Cover loosely with foil and place on middle shelf of preheated oven and bake for 40 mins, then take off foil and bake for a further 20 mins or until cooked thoroughly.
When meatloaf is cooked take out of oven and let it stand for 10 minutes before serving.
(You can also mould this to 4-6 individual meatloaves - eat some now and freeze the rest).

Serve either hot or cold with veggies or salad of your choice. A couple of tablespoons of salsa on top of the meatloaf after cooking makes a nice addition.
