Coconut Macaroons

Introduction

No added fat except for the cooking spray needed on your baking sheet. Low flour. Use only egg whites. Tastes great. You can use splenda if you like to bring down the sugar content. Ingredients

    The ingredient list wouldn't let me put exactly the measurements that I wanted. But this list is correct.

    14oz Sweetened Flaked Coconut
    2/3 c sugar
    6 tbsp flour
    1/4 tsp salt
    4 egg whites
    1 tsp almond extract

Directions

Preheat your oven to 325.
Mix coconut, flour, sugar and salt together in large bowl. Combine egg whites and almond extract and add to coconut mixture. Cover a baking sheet with foil, spray with cooking oil, flour as you would a cake pan, shake off excess flour . Drop cookies by teaspoonfull. Bake at 325 for 20 minutes until the edges are golden brown, remove right away and cool on a wire rack. You can melt chocolate and dip the cookies halfway for extra YUM! or not because they are good just like they are. Or even in white chocolate, or drop in red food coloring for Valentine's day, or Green for St. Patrick's day. Do what you want! Enjoy. This recipe is for two cookies per serving.
