Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cook
Spinach, fresh, 20 leaf
Apples, fresh, 1 cup, quartered or chopped
Marinated Artichoke Hearts, 1 cup
*Dole Mandarin Oranges, 1 cup
*Girard's Balsamic Vinaigrette fat free salad dressing, 4 tbsp
Cabbage, fresh, 1 cup, shredded
*Athenos Reduced Fat Feta Cheese, 2 oz
Wash fresh spinach leaves and pat dry.
Add spinach, cabbage and chicken into a bowl. Top with feta cheese and fruit and dressing.
**Chicken can be precooked and salad can be made for an afternoon picnic lunch or BBQ.
