Introduction

This is a very nutritional soup, delicious on a cold winter day. Low fat, low cal, low carb, and rich in potassium and fiber. Serve with a whole wheat dinner roll or 9-grain bread. Ingredients

    * Garlic powder, 1 tbsp
    * Pepper, black, 1 dash
    * Cabbage, fresh, 1 head, large
    * Carrots, raw, 4 large
    * Tomato Juice, low salt, 16 oz
    * Canned Tomatoes,28 oz size, 2 cans
    * Water, 8 cups
    * Dried Lentils, 2 cups
    * Yellow or orange sweet pepper, 1
    * Sweet Red Onion, 1 large
    * Snow peas, fresh, 2 cups

Directions

This is enough to make sure you have leftovers! To prep, rinse lentils and wash veggies. Dice carrots, cabbage, onion, and bell pepper. Add all ingredients to a slowcooker and cook for 8-10 hours. You can add additional spices to taste. Yummy and very filling. Freezes well. Enjoy!

    I wish Spark People would list the sugar content in the nutritional info. Sugar is a HUGE culprit against the battle of weight loss and many health issues. - 2/27/13

    I will make this again, my husband really liked it. I thought it was a little sweet. It was too much for my crock pot and I think I have a very large pot. I think next time I will only use one can of tomatoes and another onion and cloves of garlic. It does make a large batch and good for leftovers. - 3/5/09

  • So glad I saw the notes to halve the ingredients, even at half it filled my crockpot to the brim!

    That being said, this was delicious! I used tomatoes with green chiles to give it a little kick. This is definitely going into regular rotation, thank you! - 4/3/13

  • Very tasty! Wish I'd read the comments about there being too much for most slow cookers! It was more like a stew since there wasn't room to add all the liquid. I'd make a half recipe next time! - 8/23/11

  • 1st time around, I added only herbs, bay leaf, a little basil. I used a 6 qt crock pot and it fit fine. Thought it was very good. I add 1 teaspoon olive oil per serving, when I serve it. I have added at various times, broccoli or cauliflower or zucchini or yellow crookneck squash, any or all.1-1/2c. - 7/21/11

    Hi Carrie. The tomatoes are the large cans, I think 28 oz each, and the lentils are the dried type found in a bag near the navy beans and kidney beans in the grocery store. Glad it looks good to you. Let me know how it turns out. Have a great week!
