1 Pkg frozen Potatoes O'Brien (about 4 Cups) 1 Green Pepper, chopped 1 large Onion chopped 1/2 Pork and Beef Sausage 2 Cups Sliced fresh Mushrooms 1.5 cup Egg Beaters, liquid
Brown sausage in a large skillet. Drain grease. Add chopped green peppers and onions. Cook for 2 minutes, then add the frozen potatoes O'Brien. Add sliced mushrooms. Cook until potatoes are starting to brown, and veggies are almost tender. Move potatoe mixture to one side of skillet. Pour Egg Beaters into empty side of skillet and stir until almost done. Then mix eggs with the rest of the potato mixture. Let cook a few more minutes, then serve hot. Garnish with light sour cream and shredded cheese if desired.
