Shrimp Scampi

Introduction

Serve over rice for a quick and delicious meal. Serve over rice for a quick and delicious meal.

Ingredients

    10 oz. shrimp, peeled and deveined
    4 Tbsp. margarine
    1-2 tsp garlic powder to taste
    6 saltine crackers
    4 oz. white wine

Directions

In a medium fry pan over medium heat melt butter and add garlic, stirring so the garlic doesn't burn. Add shrimp and toss to coat. Remove from heat. Stir in crumble saltines. Put shrimp mixture into a 1-1/2 quart casserole dish. Pour white wine and lemon juice on top of mixture. Bake at 350 degrees for 20 minutes. Makes 2 servings.
