Slow Cooker Chicken Tacos

Introduction

Quick, easy and low-fat! Quick, easy and low-fat!
Number of Servings: 8

Ingredients

    1 pound boneless skinless chicken breasts
    1 (16 oz) jar of salsa
    1 package taco seasoning

Directions

Cook in crock pot for 8-10 hours on low. Shred meat using forks, and serve on whole wheat tortillas with 2% cheddar cheese and non-fat refried beans. (Calories not included.)

    This was outstanding! This could also be used as the base for chicken nachos which is what I did! I added shredded lettuce, light sour cream, chopped tomatoes, chopped red onion, fat free refried beans, and fat free shredded mexican cheese and it was delicious! Thanks for this recipe! - 1/23/11

    Added black beans and corn as well. Used 4 chicken breasts...could use up to 6 w/ 1 jar of salsa. EASY and GREAT!! I had mine over a bed of spinach, kids had w/ cheese on whole wheat tortillas. This base could be converted to a tortilla cheese soup and be fantastic! - 12/14/10

    It was so easy, took me maybe 3 minutes to put together. I added black beans. used frozen chicken and cooked on high. I even gave it the kids by making it quesadilla style and adding sour cream. My company raved about it! definitley making it again! might add red pepper next time. - 2/5/10

    Also added a can of black beans and a can of corn. The only thing that I had on hand was a large package of fryer chicken so I skinned it and used it in the crock-pot as the directions stated. De-boned the chicken while shredding. Meat was so tender that it fell off the bone. We loved this recipe! - 1/28/12

    To lower sodium, you could use Chef Meg's recipe for Taco Seasoning. It has NO salt in it. - 5/4/14

  • This came out really good. I actually put it into the crunchy taco shells on top of the refried beans, and it was delicious and very filling. There's plenty left over, so we'll probably have it for lunch tomorrow with some tortilla chips and guacamole. Outstanding! Thanks for sharing. - 5/8/14

  • I will make a batch of this at the beginning of the week and add onto salads, pitas, side dishes etc. (in addition to the chicken and salsa, I'll variably throw in a bag of frozen veggies, black beans, chopped green chiles etc.) Top with a spoonful of non-fat greek yogurt instead of sour cream.   • Random! I made this recipe yesterday afternoon after having seen it on Pinterest, then saw it on SP today! I like to add corn, bell peppers, onion, and cayenne pepper, then use the chicken to top salad all week for lunch with kale, cucumbers, avocado, and FF cheese (no dressing). - 9/23/13

  • I make a very similar dish but sauté chicken, mushrooms and onions on the stove, add in a large jar of Chi Chi salsa and chili powder to taste. Excellent served in warm soft tortilla shells with cheddar cheese and fat free sour cream. - 9/23/13
