Roated Yellow Peppers (bell peppers)
roma Tomatoes 2 medium
black olives chopped .25 cup
Orzo Pasta, 2.5 cup
low sodium chicken broth, 2 cup
Spray pump Canola Oil, 1 tbsp (remove)
*Turkey, Ground turkey, 93% lean, 1 lb
Garlic, 2 clove
*Fennel seed, groudn 1 tsp
Red Pepper flakes, .25 tsp
Parsley, fresg 2 tbsp
Pepper, black, 1.5 tsp
Feta Cheese, .5 cup, crumbled
Directions
Put pasta water on to boil
(You can buy peppers roasted or roast your own -on broil for 5 -6 min - put in covered bowl to steam - when cool (15 - 20 min) run under cold water to remove blackened skin
Chop peppers and tomato
begin cooking turkey add garlic and spices
cook orzo pasta according to package directions
When turkey is no longer pink add tomato, peppers, and olives.
Add chicken stock and allow to reduce
in a large bowl combine turkey mixture with orzo and add one more warmed cup of chicken stock
top with Feta and parsley
add drained
add 1 cup of chicken stock
