Corn Chowder

Introduction

Number of Servings: 4

Ingredients

    Butter, salted, 1 tbsp
    Celery, diced, 1 cup
    Onions, 1 cup, chopped
    Peppers, red, fresh, 1 cup, chopped
    Corn, Canned, 1 can (12 oz)
    Potato, raw, 1 cup diced
    Parsley, 2 tbsp
    Chicken Broth, 2 cups
    2 Tbsp Flour, white
    Milk, 1%, 2 cup
    Salt, 1 dash
    Pepper, black, 1 dash
    Paprika, 1/4 tsp

Directions

1. Heat butter in medium saucepan.
2. Sauté celery, onion, and red pepper.
3. Add corn, potatoes, broth, salt, pepper, and paprika. Bring to a boil; reduce heat to medium; and cook, covered, about 10 minutes or until potatoes are tender.
4. Place 1/2 cup milk in a jar with tight fitting lid. Add flour and shake vigorously.
5. Add gradually to cooked vegetables and add remaining milk.
6. Cook, stirring constantly, until mixture comes to a boil and thickens. Serve garnished with chopped fresh parsley.
