Introduction

Fantastic hot or cold. With salad or veg or just by itself. Good for packed lunches Fantastic hot or cold. With salad or veg or just by itself. Good for packed lunches
Number of Servings: 6

Ingredients

    I large onion
    I medium potato
    5 medium fresh eggs beaten
    1/2 cup frozen peas
    1/2 cup chopped mushrooms
    2 cloves garlic
    teaspoon mixed dried herbs

Directions

Dice onion and potato and microwave on high for 4 minutes.
Add peas chopped garlic and mushroom and microwave for a further 2 minutes.
Heat oil in frying pan and add vegetables.
Stir for 2 minutes. Mix eggs with herbs and add to vegetables. Season with salt and pepper to taste
Mix well and continue to cook for 3 minutes. Remove from stove and place under a grill until golden brown.
Eat hot or leave to cool.
