Mexican Chicken

Number of Servings: 4

Ingredients

    1 pound chicken breast skinned cut into 1/2 inch pieces
    1 teaspoon ground cumin
    1 green pepper chopped
    16 oz jar of salsa
    2 oz. Neufchautel cheese
    1 can 16oz black beans drained and rinsed
    1 tomato chopped
    1/2 cup Mexican Style 2% milk shredded cheese

Directions

Heat oven to 350 degrees. Saute chicken and cumin in oil on top of stove. Cook for 2 minutes, add green pepper cook another 2 minutes, add salsa, cook another 2 minutes add Neufchautel cheese cook another 2 minutes or until melted. Add drained black beans and tomato and blend.

In a 8 x 8 pyrux dish spoon the mixture and cover bottom of dish. Top with tortilla and use 1/2 of cheese as topping. Spoon the rest of the mixture and top with the remaining tortilla and top with the remaining shredded cheese. Cover with tin foil and bake for 20 minutes. Serves 4 people. Weight Watchers point is 7 per serving
