Shrimp Scampi with Angel Hair Pasta

Ingredients

    1 Tbsp olive oil
    2 Tbsp Country Crock Churn Style Butter
    4 cloves fresh chopped garlic
    1 lb fresh shrimp, peeled and deveined
    1 Tbs fresh squeezed lemon juice
    2 Tbs fresh chopped parsley
    1/2 tsp salt
    6 oz uncooked Ronzoni Smart Taste Angel Hair Pasta

Directions

In large skillet over medium heat, melt butter with olive oil; add garlic. Cook 1 minute or until fragrent; do not brown. Add shrimp; cook 3 minutes, stirring frequently, or until shrimp turn pink on both sides. Sprinkle with salt; stir in parsley and lemon juice. Reduce heat to low.


Meanwhile, cook pasta according to package directions. Toss with shrimp mixture. Serve immediately.

Makes 4 servings of 1 cup each


**additional options** for a little more flavor you may chose to add a sliced bell pepper and 1/4 cup diced onion. I also sometimes sqeeze extra lemon juice onto the dish after cooking.
