Introduction

We love, love, love this soup! It's hearty, filling, and comes together super quickly. For dinner, we double up and have two servings each with a side salad or a side sandwich. Ingredients

    3/4 lb. lean ground turkey
    1/2 medium onion, diced
    1 tsp. minced garlic
    1 tbsp. butter or margarine
    2 c. low-sodium, low-fat chicken broth
    1-14 oz. can stewed tomatoes
    1-8 oz. can tomato sauce
    1-10 oz. package frozen mixed vegetables
    2 medium potatoes, diced small
    1 packet dry onion soup mix
    1 tbsp. sugar

Directions

Melt butter in large soup pot over medium heat. Saute onions and garlic until onions are tender. Add ground turkey. Brown. Stir in remaining ingredients. Bring to a boil. Simmer uncovered, for 15-20 minutes, or until potatoes are tender, stirring periodically.
