Broccoli Soup

Introduction

This soup freezes well! Just cool completely and fill a freezer bag halfway. Lay flat in freezer so it won't take up too much room. Ingredients

    2 T Olive Oil
    1 Onion, coarsly chopped
    salt and pepper
    2 lbs broccoli, cut into florets, stalks peeled and cut into 1/2 inch chunks
    1 baking potato, peeled and cut into 1 inch chunks
    1 can Swanson Natural Goodness Chicken Broth
    1-3 t fresh lemon juice

Directions

In large dutch oven, heat olive oil over medium heat.. Saute onion in 5-7 minutes. Season with salt.

Add chicken broth, broccoli, potato and enough water (4-6 cups) to cover. Bring to boil, reduce to medium, and simmer until vegetables are soft, about 20 minutes

Working in batches, puree broth and vegetables in blender until smooth, transferring to clean pot as you work. (Hint: to prevent splattering, fill blender halfway, adn allow heat to escape by removing cap and covering hole with a dishtowel.)

Adjust soup's consistancy by witha little water if neccessary. Season with a little more salt, pepper adn lemon juice to taste.
