Brittany's Potato Salad

Number of Servings: 3

Ingredients

    3-4 small potato's
    1/2 a small carrot
    1/2 cup of reduced fat or fat free sour cream
    1 small apple (any variety)
    1 dill pickle.

Directions

First peel carrot, potato's & your apple.
After peeling all these ....
cube your carrots
cube your potatoes
dice your apple
dice your pickle.
Boil carrots & potato's seprately for about 10-15 minutes each, so that they are still somewhat solid and not moosh. & let cool.
After cooling is done, toss all ingredients in a large bowl, and mix in the sour cream...
makes for a yummy side.
