Mediterranean One Pot Chicken Dinner

Introduction

I love the tasty flavors of the Mediterranean and it's oh so healthy for you! This is a nice dish to make for company and share with a cuke salad, crusty bread and a good wine! Yummm! I love the tasty flavors of the Mediterranean and it's oh so healthy for you! This is a nice dish to make for company and share with a cuke salad, crusty bread and a good wine! Yummm!
Number of Servings: 6

Ingredients

    * Olive Oil, 1 1tsp
    * Onions, raw, .5 cup, chopped
    * Apple juice, unsweetened, 1 cup
    * Water, tap, 1 cup
    * *Canned diced or whole tomatoes no salt added, 15 oz can
    * Chicken Breast, no skin, 24 ounces (6 small)
    * Feta Cheese, .5 cup, crumbled
    * Oregano, ground, 1 tbsp
    * Orzo Pasta, 1 cup

Directions

Cook orzo per package instructions.
In large skillet, heat olive oil and onions about 3 mins; add chicken breasts and oregano and brown lightly.
Add water, apple juice, tomatoes with juice; cover and cook at a soft boil about 10 mins until chicken is cooked through.
Remove chicken to a plate; continue cooking sauce at boil for another 5 mins to thicken.
Add orzo and feta, stir till cheese melts.
Add chicken back to skillet; stir to incorporate flavors.

Serves 6.
