Introduction

Egg Beater Frittata. Great way to use up left over veggies. Egg Beater Frittata. Great way to use up left over veggies.
Number of Servings: 4

Ingredients

    1 carton 500g egg beaters
    1 large yellow & 1 large red pepper
    1.5 cups spinach
    2 tbsp chives
    3 tsp chopped garlic
    1/4 cupOnions chopped
    2 tbsp chives
    3 medium firm tomatoes
    1.5 cups chopped green beans
    2 tbsp fresh grated parmesan
    1.5 cups chopped fresh spinach
    your favorite spices

Directions

Chop all veggies
mix in casserole dish with garlic & spices
pour egg beaters over
sprinkle with parmesan
bake at 350F for 40 minutes
cut into 4 large servings to have as a meal or into six smaller squares for a healthy protein & veggie snack.
