Number of Servings: 6

Ingredients

    1 cup diced celery
    1 cup sliced carrots
    1 cup sliced onion
    2 tsp olive oil
    2 cloves minced garlic
    1 Tbsp. ground fennel seeds
    1 tsp thyme
    2 cups fat-free chicken broth
    1.5 cup diced potato
    Large can (29 oz.) crushed or pureed tomatoes
    .5 cup frozen corn
    16 ounces tilapia cut into 1-inch pieces

Directions

Saute celery, onion, and carrot for 2 minutes in olive oil on medium high heat. Add garlic, ground fennel seeds, and thyme. Saute for another minute or 2. Add 2 cups fat-free chicken broth and diced potato. Bring to a boil and cook for 10 minutes. Add crushed tomatoes and frozen corn. Bring to boil. Add tilapia. Simmer for 5 to 8 minutes. This recipe will fill a 3-quart pan. Adjust seasonings as needed. 6 very hearty portions.
