Muneebah's Rice Noodle and chicken Stir Fry

Introduction

Ingredients

    2 Skinless Chicken Breast diced into small pieces
    1/2c Raw broccoli florets
    1/4c diced of Red, Yellow and Orange Peppers each
    3 cloves (sliced) Garlic,
    21 1/2 tsp Dried Crushed Red Pepper Flakes
    1/4c sliced Onions
    1/4c chopped Scallions
    2 1/2tbsp Plum Sauce
    1/2c Water
    1c Sliced Mushrooms
    2c Rice Noodles

Directions

This serves two health portion for 2 or it can be divided to serve 4. First, chopped all vegetables and set aside. Next, dice the chicken breast into bite size pieces, Saute chicken in olive oil. Toss in chopped vegetables. Sprinkle in red pepper flakes. Add water to deglaze pan. Add plum sauce. Prepare rice noodles according to the package. Stir into the vegetable chicken mixture. Most of the liquid will absorb into the noodles. More water maybe added. Finally, if necessary, you may add a dash of soy sauce.
