Number of Servings: 8

Ingredients

    lean ground beef
    tomato or V8 juice
Quaker Oats (quick or old fashioned,
    uncooked)
1 egg or 2 egg whites
    onion
    black pepper

Directions

Serves 8:
1. Heat oven to 350.
2. In large bowl, combine all ingredients. Mix
lightly but thoroughly.
3. Form into a loaf. I use an over-sized pyrex dish
so juices drain off as loaf cooks.
4. Bake 1 hour or until meatloaf is to medium doneness (106F) and center is no longer pink.
5. Let meatloaf stand 5 minutes; drain off any juices before slicing.

How much meat? How much oats? How much tomato sauce? Please don't say "to taste". I am not a very creative cook, I need more specific directions. Would like to try this, but need more to go on. - 2/18/09

I thought this was quite good! Thanks for sharing. I made it with turkey instead of beef, and it was really tasty. For those who were asking how much of each ingredient to use, if you click on the "Ingredients Details" link under the nutritional info, you will see the amounts entered in by the OP. - 6/30/09

  • This is like a recipe I make and I wanted to use this to put it in my Sparkpeople tracker, but you don't give the amount of meat, so I don't know how much one serving is. - 12/15/09

  • My kids loved it and the great surprise was the V8, I always make my meatloaf with oatmeal but never used the V8. My 17 yr old son was watching me make this recipe and I thought he would dislike because of the V8 but I was pleasantly surprised he actually liked it. Thanks - 10/22/09

  • The oatmeal filler is what makes this meatloaf so nutritional. I add 1-2 tablespoons Worchestershire sauce and the last 1/2 hour cover with ketchup. - 2/13/09

  • Love this recipe! I used tomato soup, 1/2 cup in the meatloaf itself and the other 1/2 cup spread over the top of the meatloaf combined with some ketchup. Added some garlic powder. Definitely will make it again! - 2/10/09
