Ingredients

lean ground beef
tomato or V8 juice
Quaker Oats (quick or old fashioned,
uncooked)
1 egg or 2 egg whites
onion
black pepper
Directions
Serves 8:
1. Heat oven to 350.
2. In large bowl, combine all ingredients. Mix
lightly but thoroughly.
3. Form into a loaf. I use an over-sized pyrex dish
so juices drain off as loaf cooks.
4. Bake 1 hour or until meatloaf is to medium doneness (106F) and center is no longer pink.
5. Let meatloaf stand 5 minutes; drain off any juices before slicing.

I thought this was quite good! Thanks for sharing. I made it with turkey instead of beef, and it was really tasty. For those who were asking how much of each ingredient to use, if you click on the "Ingredients Details" link under the nutritional info, you will see the amounts entered in by the OP. - 6/30/09
