Chickpea Salad

Ingredients

    5 c. chickpeas
    5 green onions, chopped
    3/4 c. water
    1 tbsp chopped garlic
    8 tbsp Nasoya mayonnaise
    salt and pepper

Directions

Process chickpeas & water in food processor until crumbly. Mix together remaining ingredients. Season with salt and pepper to taste. Serve in sandwiches, on a bed of lettuce, in a pita or alone.

Makes approx. seventeen 1/4 cup servings
