Low Fat Banana Bread

Ingredients

    2 eggs
    2/3 cup brown sugar, unpacked
    2 or 3 very ripe bananas, mashed
    1/4 cup unsweetened applesauce or non-fat yogurt
    1/3 cup non-fat milk
    1 tbsp vegetable oil
    1 tbsp vanilla extract (up to, use pure if you can)
    1 cup all-purpose flour
    3/4 cup whole wheat flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tbsp ground flax seed
    1 tbsp cinnamon
    1 tsp nutmeg

Directions

1. Preheat oven to 325 degrees F. Spray a loaf pan with non-stick cooking spray and lightly dust with flour.
2. In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes. Beat in bananas, applesauce (or yogurt) milk, oil, and vanilla.
3. In a separate bowl, sift together flour, baking powder, baking soda, salt, and then mix in cinnamon, nutmeg and flax. Stir flour mixture into banana mixture, mixing just until blended. Pour into prepared pan.
4. Bake until golden and toothpick (or wooded skewer) inserted into centre comes out clean, approx, 1 hour. Turn bread out onto wire rack and let cool.
Makes 12 slices.
