Number of Servings: 4

Ingredients

    1 pound Wild Salmon fillets (fully thawed)
    4 tbsp Country Crock Light Margrine

    Salsa Ingredients:
    1 red pepper, dried
    1/2 cup minced sweet onions
    1/2 cup diced pineapple (unsweetened)
    3 tbls minced fresh parsley or cilantro
    1/3 cup minced gherkins (pickling cucumbers, they are smaller than regular cucumbers)
    1 tbls lemon juice
    Salt and Cayenne Pepper to tast

Directions

Combine all salsa ingredients in a bowl and refrigerate salsa for one hour before serving.

Preheat oven to 375

Pour half the butter into a shallow oven-safe pan (cookie sheet works best). Add the salmon and pour remaining butter on top. Bake for 7 minutes. Do not turn. Serve with pan juices and top with piccadilly salsa.
