Chicken Noodle Soup (Easy)

Introduction

I tweaked a recipe I found online. This is fast and easy to make and is delicious! The Nutrition Information is for the ingredients listed minus the salt to taste (I don't usually add any). You can substitute a can of vegetable broth or another can of chicken broth for the water. I usually add extra vegetables. I tweaked a recipe I found online. Ingredients

    Cooking spray
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    4 14.5 ounce cans chicken broth, low/reduced sodium
    2 cups water
    1 pound chopped cooked chicken breast
    1 1/2 cup egg noodles
    1 cup sliced or chopped carrots
    1/2 teaspoon dried basil
    1/2 teaspoon dried oregano
    salt and pepper to taste

Directions

Spray a large pot with cooking spray. Over medium heat, saute onion and bell pepper about 5 minutes (until tender). Pour in broth and water and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil. Reduce heat and simmer 20 minutes.

An alternative is to cook the chicken in the pot with the vegetables. Make sure the chicken is cooked thoroughly. Then add the rest of the ingredients.
