Gluten free corn bread muffins

Introduction

Easy and good. Basic gluten free ingredients and can be made vegan style. Easy and good. Basic gluten free ingredients and can be made vegan style.
Number of Servings: 15

Ingredients

    1/2 c brown sugar
    1/2 c peanut oil
    1/3 c flaxseed meal mixed in 1/4 c water
    1c brown rice flour
    1/2c potato flour/starch
    1 t xanthan gum
    3 t baking powder
    1/8 t salt
    1 1/2 c yellow cornmeal
    2 c fat free 1/2 & 1/2 (any milk works, cow, soy, goat, rice, etc)

Directions

Preheat oven to 400
Blend together sugar and oil, mix in flaxseed meal mixture. In separate bowl mix dry ingredients well then add above mixture alternating with milk. Pour batter into greased muffin pans. I used a pan for extra large muffins and it makes 7 1/2 and 1/2 a muffin is very filling!
