Cocoa Muffins

Introduction

I wanted to create a high fiber and high protein breakfast muffin. This would also satisfy a chocolate craving. I wanted to create a high fiber and high protein breakfast muffin. This would also satisfy a chocolate craving.
Number of Servings: 12

Ingredients

    Wet Ingredients:
    1 cup of white beans, rinsed and drained
    1/4 cup of sweetened applesauce (Could use unsweetened, but that's what I had)
    1 egg
    1/2 cup sugar

    Dry Ingredients:
    1/2 Cup of cocoa powder
    1/2 cup of flour
    1 tsp of baking powder
    1/2 tsp of baking soda
    1/4 tsp of salt

Directions

Preheat oven to 350. Line 12 muffin tins or spray pan with cooking spray.

Mix wet ingredient list in a blender or food processer until smooth. Combine dry ingredients in mixing bowl. Combine both mixtures just until moist. Place into pan and bake for 10-15 minutes, until toothpick comes out clean.
Makes 12 small muffins.
