clk's Pork stir-fry w/ ginger

Ingredients

    1/3c flour(unbleached), 2lb pork cubed, 3T canola oil, 1 large onion(diced), 1 med. green pepper(1/3 bag frozen pepper mix), 2 celery ribs sliced, 1c water,1/4c chicken broth(progresso-no msg), 1T lemon juice, 1t sugar(1/2 pack of truvia-natural sweetner made from stevia plant), 1t ground ginger, 1/2t minced garlic(jar), 1/2t salt, 1/4t pepper, 1Tcornstarch,1T water, 2oz diced pimientos-drained.

Directions

place flour in plastic bag, add pork and shake to coat. in large skillet or wok over medium heat, brown pork, add next 11 ingredients: bring to boil, reduce and simmer 20 minutes. combine cornstarch and cold water till smooth and stir into skiller. simmer 10 minutes then add pimientos. serve over rice if desired
