The Best Chicken Noodle Soup Ever

Number of Servings: 8

Ingredients

    4 cups Carrots, chopped
    4 cups Celery, chopped
    1 large Yellow onion, chopped
    3 cloves Garlic, minced
    2 1/2 cups Reduced sodium, fat-free chicken broth
    8 cups Water
    1/4 cup Dried Herbs de Provence
    8 oz Boneless, skinless chicken breast, cubed
    2 cups Wide Egg Noodles
    Salt and pepper to taste


Directions

In a large stock pot, combine carrots, celery, onion and garlic.
Add broth, water and herbs.
Bring to boil over medium-high heat.

In a non-stick skillet, cook the chicken over high heat long enough to develop a caramel brown color on the outside. Work in small batches so the chicken will be able to caramelize - too large a batch will release more juices than needed, and the chicken will boil, but will not develop a roasted flavor. It is not necessary to cook the chicken through at this point. Once the color develops, add the chicken to the vegetables and broth in the stock pot.

Once all the chicken has been added to the soup, using a ladle, draw 1 cup of the liquid from the soup, and add it to the skillet used to cook the chicken. Stir gently to loosen any bits of chicken and residue from the pan. Add the liquid back to the soup.

Reduce the heat and cover. Simmer for 20 minutes, then add the egg noodles and stir. Continue to simmer the soup for 10-15 minutes longer or until the vegetables and noodles are tender and the chicken pieces are cooked through.

Add salt and pepper to taste.

Makes 8 2-cup servings
