Creamy Chicken and Rice Casserole

Introduction

This is a warm and cozy food and extremely low in fat. Because it is so low in fat I added full fat cheddar cheese. This is a warm and cozy food and extremely low in fat. Because it is so low in fat I added full fat cheddar cheese.
Number of Servings: 6

Ingredients

    2 chicken breast (diced) (1.5 lbs)
    1/2 large onion diced
    1/2 cup celery diced
    2 Tblsp Olive Oil
    2 cups brown rice
    1 can cream of chicken soup (98% fat free)
    1 cup skim milk
    1 cup sharp cheddar cheese
    1 cup broccoli
    1/2 tsp ceyenne pepper
    1/4 tsp black pepper
    1 1/2 tsp salt

    Topping:
    1 cup corn flakes (crushed)
    1/2 stick butter melted

Directions

Dice the chicken into small bite size pieces seasoned with salt and pepper then brown in skillet with 1 tablespoon of olive oil when chicken is done and slightly browned, remove from skillet and place in bottom of 9 x 13 baking dish, add broccoli on top of chicken. Add remaining oil to skillet to saute onion and celery until tender. In a separate bowl combine cooked rice, cream of chicken soup, milk, cheese, spices and the onion/celery mixture and pour over chicken and broccoli. In mixing bowl add crushed cereal flakes mix in the melted butter and sprinkle over the top of the chicken casserole and bake for 30 minutes.


Serve with side salad and dinner roll.
