Peasant Bread

Introduction

This is a great fat free bread. This is a hearty bread to serve with soup. I love it toasted after it has sat for a day. Toast it and serve with olive oil and your favorite herbs. Ingredients

    3.5 cups unbleached all-purpose flour
    1.5 cups water
    2 teaspoons Fleischmann's yeast (Bread Machine)
    3 teaspoons sugar
    1.5 teaspoons salt

Directions

In bread machine put 1/2 cup flour and 1/2 cup water. Add yeast, sugar and salt. Then add 3 cups flour and then 1 cup of water. Put it on the mix cycle. This takes 1 1/2 hrs. on my machine. I then put the raised doug into a greased glass loaf pan (large) punch it down and let it rise again. Then bake at 350 degrees for about 25 to thirty minutes.
