Simple Corn Soup

Introduction

An easy recipe to whip up on a cold dark day! An easy recipe to whip up on a cold dark day!
Number of Servings: 3

Ingredients

    2 tbsp chopped onion
    2 cloves minced garlic
    1 can whole corn kernels, with liquid
    1 can chicken stock (2 cups)
    1 cup water
    Salt and pepper to taste

Directions

Saute garlic and onion in olive oil until transluscent. Add drained corn and let brown slightly, about 7 minutes. Add chicken stock and water, and let simmer for 10 minutes.
Pulse in a blender so that it is partially smooth but still has texture. Add salt and pepper to taste.

Makes three 1 cup servings.
