Carrot Pecan Muffins Lower Calorie

Introduction

I replaced half the oil with applesauce and reduced the amount of sugar to make these family favorites contain fewer calories and fat. They're not quite as rich, but everyone still likes them! Number of Servings: 12

Ingredients

    2 eggs
    3/4 cup sugar
    1/4 cup vegetable oil
    1/4 cup applesauce
    2 teaspoons vanilla
    1 cup grated carrots, packed
    1 1/4 cups flour
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1/4 teaspoon baking powder
    2 teaspoons cinnamon
    1/4 cup chopped pecans

Directions

In a mixing bowl, beat eggs until frothy. Add sugar, applesauce, oil, and vanilla. Beat until well blended.
Add carrots, flour, salt, baking soda, baking powder, and cinnamon. Stir just until blended. Stir in nuts.
Spoon batter into greased muffin tin, dividing evenly.
Bake at 400 degrees until cake tester inserted in center comes out clean. For standard-size muffins, this is about 15 minutes.
Remove from oven, cool slightly, and remove from pan.
Makes 12 standard muffins.
