Introduction

I came up with this healthy and comforting soup from all the things in the pantry one day. It's delicious and healthy and really filling. I came up with this healthy and comforting soup from all the things in the pantry one day. It's delicious and healthy and really filling.
Number of Servings: 4

Ingredients

    1/2 cup dry lentils (I used red)
    1/2 cup uncooked quinoa
    1 can garbanzo beans (drained and rinsed)
    1 can black beans (drained and rinsed
    1 can corn (with liquid)
    1/2 bag of frozen spinach
    1/2 cup sweet onion, chopped
    4 cloves garlic, chopped
    1 tsp dry basil leaves
    1 tbsp Caesar salad dressing (I buy Kraft because it's gluten free)
    6 cups water (I would use no salt chicken stock if I had it)
    salt and pepper to taste

Directions

Combine and simmer for 1/2 hour or until lentils and quinoa are cooked through. Serve with feta cheese crumbles on top.
