Introduction

I wanted to make a cheese omlette with pizza topping as filler, but ran out of cream. What I did have in my fridge was cream cheese, and decided to make a frittata instead... Number of Servings: 4

Ingredients

    15 slices (or up to 100 grams) Pepperoni
    One chopped green pepper (about 1 cup)
    10 cherry tomatoes, sliced in half

    One packet of Philadelphia Cream Cheese (250grams)
    4 large eggs
    2 tbsp sour cream

    Optional - dried oregano and parsley.

Directions

Preheat oven grill (broiler) to max.

To fry together first (in a little olive oil):

15 slices (or up to 100 grams) Pepperoni
One chopped green pepper (about 1 cup)
10 cherry tomatoes, sliced in half

Leave these to fry until crisp

Meanwhile, blend the following together until smooth:

One packet of Philadelphia Cream Cheese (250grams)
4 large eggs
2 tbsp sour cream

Pour egg mixture over pizza toppings, and stir in frying pan until the mixture is well combined and begins to crisp at the edges.

Wait until bubbles start coming through to the top of the mixture, then sprinkle shredded mozzarella cheese (about 1/4 cup) over the mixture.

Place pan under grill/broiler until cheese has melted and frittata has mostly solidified.

I love to serve frittata cold, and I put it straight in the fridge, but you can serve it warm as well. Just let it sit for about 10 minutes so it is stable and easy to cut and serve.

Great herbs to add when making egg mixture - oregano and parsley.

Cut into quarters, or smaller if using as a side dish.
