My Mom's Awesome Veggie Soup

Introduction

Please understand that my Mom changes this recipe each time by swapping out whatever vegetables and beans available. Please understand that my Mom changes this recipe each time by swapping out whatever vegetables and beans available.
Number of Servings: 12

Ingredients

    4 teaspoons of Olive Oil
    3-4 finely chopped garlic cloves
    1 cup of chopped red or white onion
    1 finely chopped jalapeno pepper
    Spices to taste and preference: black pepper, salt, red pepper flakes, oregano, basil, parsley flakes, bay leaves.
    Chop one half of a large (7" cabbage)
    Dice two medium/large carrots
    Dice one large potato
    1 cup diced celery
    2 cans of garbanzo beans drained
    2 cans of lima beans drained (or other beans)
    1 Large can of whole tomatoes chopped and liquid
    2 tablespoons of tomatoe paste
    1-2 cups of water
    2-4 ounces white wine (or red wine or vinegar)

    You may swap in and out the veggies, beans and spices you prefer. You can add meat if you like (shrimp, chicken, beef)





Directions

In a large dutch oven, stock pot:

1. Sautee onion, garlic, in olive oil on low.
2. Then add spices to coat sautee, and gradually stir in all of the fresh veggies.
3. Add beans, canned tomatoes and the juice (My Mother prefers "Hunts" brand.
4. Add the water (which my Mother usuallys from boiling whole wheat penne pasta-which she serves the soup on top of). Sitr in tomatoe paste. Stir in white wine (may substitue vinegar, red wine to the tartness you prefer)
5. Bring to a boil and simmer for minimum 30 minutes.

Makes approximately 12 two cup servings.

Served:
On top of 1/2 cup of whole grain pasta or brown rice. Parmesan cheese and fennel seed shaken on top. Chopped cilantro is an alternate topping.
