Whole Wheat Zucchini Bread

Introduction

Ingredients

    5 egg whites, beaten
    1/2 c. honey
    1/2 c. packed brown sugar
    1/4 c. natural, unsweetened applesauce
    1/2 tsp. vanilla extract
    1.5 c. whole wheat flour
    1.5 c. all purpose flour
    1 T. Ground cinnamon
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    2 c. grated zucchini
    1/2 c. chopped walnuts (optional)

Directions

Preheat oven to 350. Grease an 8x4 inch loaf pan and set aside.

In a large bowl, whisk together the eggs, honey, brown sugar, applesauce and vanilla. Combine both flours, cinnamon, baking powder, baking soda and salt; stir into wet ingredients just until moistened. Gently stir in the zucchini and walnuts (if desired) until evenly distributed. Divide batter evenly between the prepared pans.

Bake for 50 - 60 minutes or until knife in center comes out clean. Cool in the pan until cool enough to touch and then turn out to wire rack. Cool completely before wrapping in plastic or storing in bag.
