Tuna Enchiladas

Introduction

I gave this a try one night when I didn't feel like cooking. It is quick, easy and tastes really good! I gave this a try one night when I didn't feel like cooking. It is quick, easy and tastes really good!
Number of Servings: 6

Ingredients

    6 Taco Size Flour Tortillas
    10 oz. Tuna in water
    1/4 cup diced Green Bell Peppers
    1/4 cup diced Red Bell Peppers
    3/4 cup White Rice
    1 tbsp Chili Powder
    1 tbsp Garlic Powder
    1 cup Shredded Cheddar Cheese

Directions

Steam white rice
While the rice is steaming, chop peppers, drain tuna and mix in medium bowl with half the tomato sauce. Add in 1/2 tbsp chili powder and garlic powder. Add cooked rice and stir well.

Mix the remainder of tomato sauce with remainder of garlic powder and chili powder

Scoop equal amounts of mixture onto flour tortillas. Use half the cheese to top the inside of each enchillada.

Roll tortillas and place in a baking dish. Pour sauce mixture over the top and sprinkle with remaining cheese.

Bake at 425 for about 15 mins.
