Stuffed Chicken Breast

Introduction

I was trying to come up with a stuffed chicken breast without using cheese and came up with this. I think it turned out really good. Next time I will try using Basil leaves instead of Spinach. I was trying to come up with a stuffed chicken breast without using cheese and came up with this. I think it turned out really good. Next time I will try using Basil leaves instead of Spinach.

Ingredients

    Boneless skinless chicken breast
    Bottled Italian Dressing
    Spinach leaves (I think fresh Basil leaves would also be good)
    Roasted red peppers ( I used the kind out of a jar)

Directions

Marinate boneless skinless chicken breast in bottled Italian Dressing. I did it for 2 hours, but next time I will do it longer.
Pound the chicken breast into about an inch thick.
Top the chicken with spinach (or basil) leaves, just enough to cover the chicken.
Top with a roasted red pepper.
Fold the chicken over long ways and close with a few tooth picks.
Bake in the oven for 15 minutes at 425 degrees. May take 20 min. if chicken is thicker.
Let the chicken rest for about 10-15 minutes before you cut it.
