Quick oven poached salmon

Number of Servings: 4

Ingredients

    4 servings fresh salmon (I use about 5 oz. per person for dinner)
    Skim milk (about 3 cups)
    1 TB dill weed
    lemon

Directions

I really just eyeball most of this when I make it, and it always turns out well. Place the clean fish into a glass pan (I use a 9 x 13). Pour the skim milk until the fish is about 2/3 of the way covered with milk. Sprinkle it with the dill weed. Bake at 325 until the fish is still slightly pink in the center. Test for doneness after about 10 minutes.

I like to serve it with egg noodles and some sort of vegetable. Nice with lemon juice on top and maybe a litle parmesan cheese.
