Spinach Salad

Number of Servings: 1

Ingredients

    Salad Ingredients:

    2 C fresh baby spinach (pre-washed)
    1/4 C red onions
    1/4 C Craisins
    1/8 C feta cheese
    1 TBL pine nuts

    Salad Dressing Ingredients:

    1/2 TBL balsamic vinegar
    1/4 TBL extra virgin olive oil
    Splash of orange juice (to taste)



Directions

1. Add all dressing ingredients into spillproof container with a lid. Shake vigorously for 30 seconds. Taste and adjust if necessary.

2. Place spinach on plate. Take the remaining salad ingredients and place over the spinach.

3. Pour the dressing over the salad.
